Winter Delicacies Of Til

Winters are here and so are the winter special foods. Sesame seeds or til are an indispensable part of Indian winters from a very long time.

Winter is the season to enjoy food so its ok even if you gain some weight also. Because its the time of the year which has so many food options from a variety of fruits and vegetables to sweet delicacies.

During this time of the year, we have a lot of festivals. And our traditional way of celebrating festivals always revolve around the sweet dishes made at home.

So recently on Sankranti festival, I made some til ladoo’s. Sankranti being a winter season festival is marked with a tradition of having sesame seeds (til), jaggery (gur) and shakar (brown sugar) as the main food on this festival. Sesame and jaggery both are loaded with surplus nutrition and so they are very advantageous for our health.

White Sesame seeds, popularly known as
‘Til’ in Hindi,
‘Nuvvulu’ in Telugu,
‘Ellu’ (Tamil, Malayalam, Kannada),
‘Teel’ in Marathi and 
‘Til’ in Bengali is the oldest condiment known to humans.

All varieties of sesame seeds are extremely nutritious.

Health benefits of sesame:

  • They have a high oil content. So in winters when our body is deprived of natural oil-eating it gives us a surplus amount of oil and helps to keep our skin and hairs healthy.
  • They are a rich source of minerals like copper and manganese.
  • Til also contain magnesium, calcium, phosphorus, iron, selenium, vitamin B1 and zinc, and are rich in dietary fiber and monounsaturated fats.
  • It has antioxidant and anti-inflammatory properties and it also helps to strengthen our heart and the list is endless.

So here go my recipes:

“Til and khoye ke ladoo” recipe:-

Ingredients:

1. 1 cup til (sesame seeds) u can take any variety white or black. My mother has always used white til so same goes with me.

2. 1/2 cup khoya (evaporated milk solid) (I use leftover residue while making ghee as khoya)

3. 1 cup sugar

4. 1 or 2 spoon ghee

Method:

  • Take a pan preferably thick bottomed. Dry roast the sesame seeds for 4-5 mins on a low flame till it turns pinkish. After cooling down them to the room temperature grind it to fine powder taking care that it does not leave the oil. Keep aside the powder.
  • In the same pan roast the khoya for 1-2 minutes.
  • Switch off the flame. Mix the powdered til in the roasted khoya. Let it cool down to the room temperature.
  • Add sugar to the above mixture. Break sugar lumps and khoya with your fingers and mix them well.
  • You can add a little bit of ghee based on the consistency of the mixture. Take a small portion of the mixture on your palm and check if you are able to make ladoo’s by binding it.

It has khoya in it so you need to store them in the refrigerator if you want to keep them for long. But if you are consuming them within 3-4 days, its ok to keep outside as weather is really nice.

The recipe and ingredients are almost the same for til ki barfi. It’s just you have to make a sugar syrup for any kind of barfi which is a tricky thing.

“Til ki barfi” recipe:-

Ingredients:

1. 1 cup til (sesame seeds) u can take any variety white or black. My mother has always used white til and so same goes with me.

2. 1 cup sugar

3. 1/4 cup water

4. 1/4 teaspoon Cardamom powder

5. 1 spoon ghee for greasing

6. 1/2 cup wheat flour

Method:

  • Take a pan preferably thick bottomed. Dry roast the sesame seeds for 4-5 mins on a low flame till it turns pinkish. After cooling down them to the room temperature grind it to fine powder taking care that it does not leave the oil. Keep aside the powder.
  • In the same pan roast wheat flour till it turns little golden brownish (almost the same color which you use for making halwa). Mix the roasted flour and powdered til.
  • Take the same pan again, add the sugar and water to the pan and keep it on the flame, keep stirring for making the sugar syrup. Heat it till sugar syrup comes to the consistency of 1 and a half thread.

Consistency check of the sugar syrup which is very important as it took me a number of live sessions with my mom to learn the perfect consistency:

Take a small drop of syrup between thumb and index finger. Raise your index finger the syrup will be sticky and when you move your finger and thumb a little apart it will appear to form a thread. It should be one complete thread that is not broken in between thumb and index finger.

As soon as it reaches the desired consistency switch off the flame. And quickly add til powder, roasted flour and cardamom powder to the sugar syrup. Mix well fast before it starts cooling off.

Pour the mixture while hot into a pre-greased plate and spread evenly.

Let it cool, but cut the shapes of barfi before cooling completely. Once cooled take out the barfi and enjoy it.

To add variations you can sprinkle pistachios/almond/ grated coconut over the set barfi when it is hot.
